So it is, from a tiny Nepalese restaurant in Queens NY to a crowded street market in Bangkok, women deep fry delectables to feed passersby and regulars. But more fundamentally, to feed their families.
Their equipment is basic: a sturdy pot and a gas burner, a voluminous wok and charcoal fire, a chair or stool to sit on, a plastic bucket or two. And gallons of grease.
The work is hot and hard, the hours are long, and women like these may be subject to harassment or worse if they are found to lack proper paperwork or if those who rule the marketplace deem them insufficiently compliant.

When looking for street food in Peru, we always sought out items that were being fried right before our eyes. It made us pretty sure that any bacteria were defunct. And of course, highland towns in Peru are where you can get the best ‘French’ fries!
